I had a ton of left over shredded beef from my taco recipe, and didn’t want to waste any of that delicious meat, so decided to make some Shredded Beef Flautas.  And let me tell you,  these were amazing!

First you need to get the beef nice and tender.

Start off by coating the chuck roast with hot sauce to create a binder for the seasoning.  Then, cover all sides with your favorite taco seasoning for which I used Dad’s Taco seaosning

Time to get the grill going.  Heat it up to 250 degrees indirect heat.  Once the temperature is reached, throw the seasoned chuck roast directly on the grates for about 3 hours.

Next, transfer the grilled beef into a dutch oven.  Add in salsa, pickled jalapeños – with all the liquids and beer then place back on the grill for another 3 hours or until the beef is nice and tender.  Shred the beef and set aside.

Man, my mouth is watering just writing this recipe!

Flautas Assembly

Before assembling the Flautas, mix in shredded cheddar into the beef.  Next, in a flour tortilla, I use Caramelo tortillas load in the shredded cheesy beef and roll up the tortilla tightly until closed.

Recipe Tip

Flautas are made with flour tortillas, while Taquitos are made with corn tortillas

Heat up a frying pan with olive oil and place the flautas seam side down first into the oil bath.  This helps seal the tortilla.  Turn them so that all sides are nice and crispy.

Before serving, top with shredded iceberg lettuce, chopped tomatoes and mexican crema.

These Shredded Beef Flautas are so much better than any store bought frozen ones and could be put together using left over shredded beef.  Give it a try!
