Grill the asian style pork belly skewers
These hit the @biggreenegg indirect at 250 degrees until they hit around 190-195 internal temperature. This will take approximately 3 hours.
While the pork is cooking, prep the sauce:⠀
⠀
– 1/2 cup teriyaki ⠀
– 1/2 cup soy sauce ⠀
– 1 tbsp minced garlic and minced ginger⠀
– 1/4 cup honey⠀
– 1 tbsp rice vinegar ⠀
– 2 tbsp Sambal chili paste⠀
– 1 tbsp brown sugar⠀
⠀
Mix everything together and simmer over low heat for 10-15 minutes.⠀
⠀
Brush the sauce on the pork belly at the very end and cook for 10 more minutes. Allow the sauce to caramelize and get nice and sticky. Remove the skewers from the grill, top with some sesame seeds and enjoy!

These were delicious! Sweet, savory, smokey, and a little spicy from the sauce. Give em a try and let me know what you think.
