American lamb is such a great protein option for the grill. The meat is lean, tender and full of rich flavor. Want to make a statement, then this smoked leg of lamb will do the trick. Smoked to perfection, the meat is tender, juicy and flavorful. Shred it up, and serve it with a pita or and braised veggies. Grab some American Lamb and give this recipe a try!

Step 1: Smoke a leg of lamb

Go to a specialty butcher or look online for leg of lamb deals. These are hard to come by in traditional grocery stores.

Start by trimming some of the fat and sliver skin off the lamb leg. Do not remove all of it, just clean it up.

Next, coat the entire leg with dijon mustard and season heavily with Dad’s All Purpose Rub.

Preheat the pellet grill to 250 degrees and set for indirect heat. Place the seasoned leg of lamb on the grill and smoke for 4 hours or until it reaches 170 degrees internally.

Step 2: Start the beer braise.

Once the leg of lamb is smoked and reaches the needed temperature, place it into a large foil pan. Add chopped carrots, onion, celery, parsley, garlic, thyme, and a few cans of beer. Cover the entire pan tightly with a foil sheet and place it back on the grill at the same temp and indirect heat set up.

Continue to cook for another 4 hours or until the meat is probe tender. This indicates the meat is soft and tender enough to shred. Remove the entire foil pan off the grill and allow the meat to rest for 30 minutes.

Finally, shred the meat off the smoked leg of lamb, remove the bones and mix it all with the veggie beer broth.

Serve the smoked lamb leg on a nice platter along with the roasted veggies, drizzle some of the broth over the meat and freshly chopped parsley and enjoy!

Smoked Leg of Lamb

Servings: 4 People

Ingredients 

  • 1  Bone-In American leg of lamb
  • 4 Celery stalks – chopped
  • 4 Carrots – chopped
  • 4 Sprigs of Thyme
  • 1 Yellow onion – chopped
  • 2 cans Light Beer
  • 2 tbsp Dijon Mustard
  • 2 tbsp Dad's All Purpose Rub
  • 2 tbsp Minced garlic
  • 1/2 cup Fresh parsley

Instructions 

  • Trim the American Leg of Lamb and remove any excess fat and silverskin.
  • Coat the outside with Dijon mustard and season with the BBQ Seasoning.
  • Place the meat on the smoker set for 250 degrees and cook for 4 hours.
  • Remove from the smoker, place it in a large foil pan and add all the remaining ingredients.
  • Cover tightly with foil and place it back on the smoker. Continue cooking until it’s fork tender, approximately 4 hours. 
  • Remove from the smoker and allow it to rest for 30 minutes. Shred the meat and mix with all broth.
  • Garnish with fresh parsley, serve and enjoy!
