  • Italian sausage: the meaty, savory base for the recipe. Choose between mild or hot.
  • Cream Cheese: provides the cheesy creaminess needed to make the dip.
  • Shredded Cheese: adds additional cheese and creamy mild flavors.
  • Giardinera: adds a savory, spicy flavor profile to the dip. Choose between mild or hot.
  • All purpose seasoning: adds traditional BBQ flavors of salt, pepper, paprika and garlic.

Step 1: How to prepare the sausage poper boats

These sausage popper boats are highly customizable. You can go down the sweet route, spicy or savory. Get CREATIVE with the ingredients.

For this recipe, I went with mild Italian sausages so my kids could eat them as well. Split down the middle without cutting all the way through. Shape each sausage into a boat like form.

For the filling I used a block of cream cheese, mild giardiniera, shredded cheddar cheese and Dad’s All Purpose rub. Mix the ingredient together to form a creamy texture.

Recipe Tip

If you like your food a little bit spicier, go with hot Italian sausage and/ or hot giardiniera.

To add additional texture, chop up a jalapeno and add into the mixture.

Next, Fill the sausage boats with about 2 tablespoons of the cheesy mixture, more shredded cheddar cheese on top and a dash of seasoning. Place them on a wire rack.

For extra savoriness, wrap each loaded sausage popper boat with BACON.

Step 2: How to grill these savory sausage popper boats

Preheat the grill to 300 degrees and set for indirect heat. Place the sausage popper boats on the wire rack onto the grill and cook for about 20 minutes. During this time, the sausage will cook through just right and the cheesy mixture will soften and become extra creamy.

Recipe Tip

If you are wrapping the boats in bacon, the cooking process may take a few minutes longer to allow the bacon to crisp up.

Before removing from the grill, always check the internal temperature of the sausage to ensure it’s cooked through.

Sausage Popper Boats

Ingredients 

  • 4 Mild Italian Sausage
  • 8 oz Cream Cheese
  • 1/4 cup Shredded Cheddar Cheese
  • 2 tbsp Mild Giardiniera
  • 1.5 tbsp Dad's All Purpose Rub

Instructions 

  • Split down the middle if the sausage link without cutting all the way through. Shape each sausage into a boat like form.

Notes

If you like spicy foods and are not afraid of heat, use hot italian sausage for the boats.
Make the boats on the grill.  It adds a nice layer of smokiness.
Add flavor with different cheese varieties.  Don’t be scared of the smelly ones.  
Do NOT season the bacon with any spices.  This is a very savory dish from the cheese and seasoning.  Any more, and it will be too salty
Replace giardiniera with freshly chopped jalapenos for that extra kick and crunch.
