This simple and easy Fajita roll ups are the perfect dinner solution if you are pressed for time.  With a homemade taco sauce, this is a delicious treat for everyone to enjoy! With just a few ingredients, not only does this recipe taste good, but looks pretty too.

Step 1: Prep the veggies.

Since fajita’s usually have sauteed bell peppers and onion, I decided to stay with those veggies.  That said, feel free to modify this recipe with crispy veggies that you prefer.  You can use asparagus, sliced carrots, celery and many more.

Slice long strips of each veggie. Drizzle with olive oil and season with your choice of taco seasoning.

Step 2: How to make fajita rolls ups.

For this recipe I used skirt steak which is a perfectly thin layer of meat used for fajitas and easy to stuff and roll.  

Cut the skirt steak into 3 or 4 inch strips.  Drizzle with olive oil and season with taco seasoning.  Place a strip of each of the veggies prepared and roll it up.  Secure it with 2 toothpicks and cut off any pieces sticking out. Season the outside of the fajita roll ups for extra flavor.

Preheat the griddle to medium heat and grill the roll ups rotating them every minute to ensure an even cook throughout.  Total cook time should be around 5-6 minutes.  The steak will be tender and juicy and the veggies slightly crunchy.

Step 3: How to make homemade taco sauce.

Homemade taco sauce is so easy to make!  Once you make it once, you’ll never go back to store bought.  Best part is you can adjust the flavors to your liking.

In a mixing bowl, add tomato sauce, white vinegar, cumin, paprika, cayenne pepper, chili powder, onion powder, garlic powder, sugar, taco seasoning and a pinch of salt.  Mix or whisk the ingredients together.

Before serving, drizzle some of the sauce over the delicious fajita roll ups and enjoy!

Fajita Roll ups

Ingredients 

  • 2 lbs Skirt steak
  • 2 Bell peppers
  • 1 Red onion
  • 2 tbsp Olive oil
  • 3 tbsp Taco seasoning

Homemade Taco Sauce Ingredients

  • 16 oz Tomato sauce
  • 3 tbsp White vinegar
  • 2 tsp Taco seasoning
  • 2 tsp Onion powder
  • 2 tsp Garlic powder
  • 1 tbsp Cumin
  • 1 tsp Paprika
  • 1 tsp Chili powder
  • 1 tsp Cayenne pepper
  • 1/2 tsp Sugar
  • 1 pinch Salt

Instructions 

  • Slice long strips of each veggie. Drizzle with olive oil and season with your choice of taco seasoning.
