Slice long strips of each veggie. Drizzle with olive oil and season with your choice of taco seasoning.
Cut the skirt steak into 3 or 4 inch strips. Drizzle with olive oil and season with taco seasoning.
Place a strip of each of the veggies prepared and roll it up. Secure it with 2 toothpicks and cut off any pieces sticking out. Season the outside of the fajita roll ups
Preheat the griddle to medium heat and grill the fajita roll ups rotating them every minute to ensure an even cook throughout.
For the homemade taco sauce, in a mixing bowl, add tomato sauce, vinegar, cumin, paprika, chili powder, cayenne pepper, onion powder, garlic powder, sugar, taco seasoning and a pinch of salt. Mix or whisk the ingredients together.
