Step 1: What ingredients go into a buffalo chicken meatball?
This recipe is not only mouthwatering delicious but somewhat healthy as well! Made from lean meat and shredded veggies, the traditional buffalo wing flavors are all there, just this one is a little easier to eat.
In a mixing bowl, add the ground chicken, 1 egg, breadcrumbs, shredded carrot and celery, Dad’s All Purpose rub, a splash of hot sauce, Worcestershire sauce and garlic. Mix the ingredients together.
Scoop out a spoonful of the chicken mixture and flatten it in your palm. Add a piece of mozzarella cheese in the middle and wrap it around with the meat. Roll it into a ball and set on a wire rack. Repeat this until you go through all the chicken mix.
Recipe Tip
- Spray the wire rack with cooking spray or coat with olive oil. This will help prevent the chicken meatballs from sticking to the grates.
Step 2: How to grill the best buffalo chicken meatballs.
Preheat the grill to 275 degrees and set it for indirect heat. Place the wire rack filled with the chicken meatballs on the grill and cook for 30 minutes or until the internal temp of the chicken reaches 165 degrees.

Remove the meatballs from the wire rack and drop them into a clean bowl. Coat them with buffalo hot sauce and toss them around making sure all the meatballs are evenly covered. Before serving, drizzle some ranch dressing over the top of the buffalo chicken meatballs and enjoy!
How to store leftover Buffalo Chicken Dip.
If by some chance you have any leftover buffalo chicken dip, you can freeze in in a freezer storage bag up to 3 months.
If you want some ready for a late night snack, store it in the fridge for up to 1 week.
