These are not your mama's meatballs. Spicy, savory and cheesy, these buffalo chicken meatballs are a slam dunk.

In a mixing bowl, add the ground chicken, 1 egg, breadcrumbs, shredded carrot and celery, Dad's All Purpose rub, 1 tbsp of hot sauce and garlic. Mix the ingredients together.
Scoop out a spoonful of the chicken mixture and flatten it in your palm. Add a piece of mozzarella cheese in the middle and wrap it around with the meat. Roll it into a ball and set on a wire rack.
Preheat the grill to 275 degrees and set it for indirect heat. Place the wire rack filled with the chicken meatballs on the grill and cook for 30 minutes or until the internal temp of the chicken reaches 165 degrees.
Remove the meatballs from the wire rack and drop them into a clean bowl. Coat them with 1/4 cup buffalo hot sauce and toss them around making sure all the meatballs are evenly covered. Before serving, drizzle some ranch dressing over the top.
Notes
Spray the wire rack with cooking spray or coat with olive oil. This will help prevent the chicken meatballs from sticking to the grates.Swap 1/3 of the ground chicken with pork for a fattier more tender meatball.
