Since my first attempt at fried rice on the griddle came out so good, it was time to make another recipe, this time steak fried rice.  Steak is my kids favorite protein and surprisingly my son, who dislikes all veggies, ate an entire plate of my fried rice; I knew I needed to make this version.  And boy it did not disappoint.  It’s a very easy and quick recipe, perfect for those weeknight dinners in between after school activities.

How to cook rice.

Before testing my hibachi skills on the griddle, I had to cook the rice.  It’s pretty simple, even if you don’t have a rice maker or instapot. You can also use day old leftover rice.

Start with rinsing the rice. This step will help remove excess starch, resulting in grains to separate better when cooked.

Next, in a sauce pan, pour 1.5 cups of dry rice, 3 cups of water and a little salt.  Let if cook until the water starts to boil.

Turn down to simmer, cover with a lid and let it cook until all the water has evaporated into the rice.  Do not remove lid to peak or stir.  Once the liquid is gone, let it rest for a few minutes and fluff with a fork.

Set aside for 24 hrs.  You can also use any leftover white rice.

Griddle time!

Finally, time to use my Loco griddle.

To get things cooking, cube up some stir fry beef and mix in corn starch and soy sauce. Chop up 1 medium white onion.

Oil up the griddle and throw both on separate ends of the cook top. While the steak and onions are cooking add in some minced garlic and ginger for that extra flavor and continue to flip over until nice and fragrant then combine the onion in with the steak and move to the side of the griddle.

Oil up the the griddle again, this time add the day old rice and a bag of frozen peas and carrots.  Mix in the onion steak combo, pour some soy sauce, sesame oil and oyster sauce and continue to mix hibachi style

Next, in the center of rice mix, place some cubed butter and eggs.  Scramble the eggs until cooked.

Finally, add in 1/2 cup of chopped green onion and mix one last time.

How to make yum yum sauce.

For the final drizzle, I put together a Yum Yum sauce.  In a mixing bowl add mayonnaise, ketchup, Tabasco Sriracha, rice vinegar, garlic and onion powder. Whisk it all together and sparsely top your fried rice with the sauce.

Let me tell you, first time making steak fried rice and it was a hit!  The whole family enjoyed a delicious meal.  And we had lots of leftovers! Enjoy!

Steak Fried Rice

It’s a very easy and quick recipe, perfect for those weeknight dinners in between after school activities.

Ingredients 

Rice Ingredients

  • 1.5 cups Uncooked rice
  • 3 cups Water
  • 1 Pinch of salt

Steak ingredients

  • 1 lb Beef stir fry
  • 1 tbsp Soy sauce
  • 1 tbsp Corn starch
  • 1 White onion

Fried Rice Ingredients

  • 1 tbsp Minced garlic
  • 1 tbsp Minced ginger
  • 1 bag Frozen peas and carrots
  • 2 tbsp Soy sauce
  • 2 tbsp Sesame oil
  • 2 tbsp Oyster sauce
  • 1/2 stick Unsalted butter
  • 4 eggs

Yum Yum sauce ingredients

  • 1/4 cup Mayonnaise
  • 1 tbsp Ketchup
  • 1 tbsp Sriracha
  • 1 tbsp Rice vinegar
  • 1 tsp Garlic powder
  • 1 tsp Onion powder

Instructions 

Rice Instructions

  • Start with rinsing the rice.

Fried rice Instructions

  • Chop up a medium white onion.
  • Oil up the griddle and throw both on separate ends of the cook top.
  • Add in some minced garlic and ginger.
  • Combine the onion in with the steak and move to the side of the griddle.
  • Oil up the the griddle again.
  • Add in the day old the day old rice and a bag of frozen peas and carrots
  • Mix in the onion steak combo and add soy sauce, sesame oil and oyster sauce and continue to mix
  • In the center of rice mix, place some cubed butter and eggs.  Scramble the eggs until cooked.
  • Add in 1/2 cup of chopped green onion and mix one last time.  

Yum Yum sauce Instructions
