It has the traditional taste of homemade smokey BBQ meatballs with a twist.  Coated in crunchy chips of your choice, this delicious snack works both as an appetizer and chip challenge.  What potato chips would you select for your flavor face off?

Step 1: How to make homemade meatballs

Game Day Crunchy Meatball ingredients

For the meat, use a mix of 2/3 ground beef and 1/3 ground pork. In a large mixing bowl, add in the ground meat, salt, Herbs of Provence or Italian seasoning, minced garlic, 1 raw egg, breadcrumbs, 1/2 grated white onion, chopped parsley and Worcestershire sauce.  With your hands, mix all the ingredients together.  Make sure to blend in all the loose ingredients massaging them into the meat.

Next, using a small cookie scooper, scoop out cocktail sized meatballs.  The scooper helps to roll equally sized meatballs which ensures an even cook all around. Place the rolled meatballs on a wire rack and these are ready to hit the grill.

Heat up the grill to 250 degrees and set for indirect heat.  Grill the meatballs for 1 hour.

Step 2: Game Day Crunchy Meatball challenge?

Let the meatballs rest while you prep or crunch the chips. Once the meatballs have rested, toss them in your choice of BBQ sauce.  I went with Sweet Baby Rays, which is a household favorite.  

Add a few handfuls of chips in a ziplock bag and crunch them by hand or with a mallet until they are broken down into fine pieces.I went with Nacho Cheese and Cool Ranch Doritos as they are the household favorites.  But any chip combo would work.

With a toothpick, pick 1 meatball and roll it in the crushed chips. The flavors add not only a new texture to meatballs but savory, sweet or spicy flavors with every bite.  Enjoy!

Ingredients 

  • 1.5 lbs Ground Beef (2/3) Ground Pork (1/3)
  • 1 Egg
  • 1/2 cup Breadcrumbs
  • 1 tbsp Salt
  • 1/2 White onion
  • 1 tbsp Worcestershire sauce
  • 1/2 cup Chopped parsley
  • 2 tbsp Herbs of Provence or Italian seasoning
  • 2 bags Different flavored potato chips
  • 1 tbsp Minced garlic

Instructions 

  • In a large mixing bowl, add in the ground meat, salt, Italian seasoning, minced garlic, egg, breadcrumbs, 1/2 grated white onion, chopped parsley and Worcestershire sauce. 
  • With your hands, mix all the ingredients together. 
  • Using a small cookie scooper, scoop out cocktail sized meatballs and place the rolled meatballs on a wire rack.
  • Heat up the grill to 250 degrees and place the wire rack on the grill for 1hour.
