Step 1: Season Turkey legs for flavor
My local store only had frozen turkey legs. If that is the case for you, make sure you completely defrost the legs before seasoning them. Place them in the refrigerator the night before and they should be ready to go the next morning.
Before seasoning the turkey legs, coat them with olive oil for the binder. Next, use Dad’s All Purpose rub and apply generously. Make sure to cover all sides of the leg. This meat can take the extra flavor.
Dad’s Seasonings
Must have grillin seasonings!
Step 2: Make homemade BBQ sauce
While store bought BBQ sauces will do the trick, there is something special about a homemade sauce. You can adjust the tangy or sweet notes to your preference and manage sugar levels if that is a concern.
In a saucepan, add brown sugar, ketchup, hot sauce, Worcestershire sauce, BBQ seasoning and Sparkling Ice Cranberry Frost. I use this carbonated drink in a lot of my sauces. It has zero sugar and is a great counterbalance to the brown sugar and ketchup. Also, it tastes great and boosts the flavor of the sauce.
Simmer the ingredients over low heat until it thickens. Set aside to cool off.
Step 3: Grill BBQ turkey legs
Preheat the grill to 350 degrees and set it up for dual zone grilling. This means you have the option of indirect heat grilling as well as direct for that final sear.
To start, place the seasoned turkey legs on the indirect side first. Grill them for 25-30 minutes or until they reach an internal temperature of 160 degrees.
Next, place them on the direct side for the final sear to crisp up the skin. Grill them for 5 minutes per side. For the final touch, brush the homemade BBQ sauce over the grilled turkey legs and let them rest for 10 minutes. Serve and enjoy!
Frequently Asked Questions:
Type of steak depends on what you are trying to grill up. For hot and fast look for cuts with good marbling like a ribeye or NY strip. If you are cooking a roast or stew, look for cuts that are cheaper and meatier like a chuck roast. For tacos, I highly recommend outside skirt steak.
