Prepare the shrimp
I like to use large shrimp for this recipe. Make sure you’re staring with RAW shrimp, that have been cleaned and deveined. I remove the shells but leave the tails on. It makes handling easier when cooked.
Line your shrimp in a foil pan in 3 rows. In a separate bowl mix 1 stick of melted butter, 1 tbsp of your favorite cajun seasoning, 3 cloves minced garlic and the juice from 1 lemon. Pour the mixture over the shrimp, making sure they are all nicely coated. Add 2-3 sprigs of fresh rosemary to the pan.
How to grill the butter smoked shrimp
Place the pan on your grill set for indirect cooking at 250 degrees. Depending on the grill that you’re using, you can add a piece of wood for some additional smoke. Cook the shrimp for 20-25 minutes, until they reach an internal temperature of 150 degrees. Remove the pan from the grill, top with more fresh lemon juice and enjoy! Like I said, quick and easy!
