Beef short rib bites are one of my favorite little snacks. Brisket on a bone, these small pieces are perfect for entertaining, tailgating or just for yourself. Full of beefy flavor mixed in with some asian soy and ginger flavors from the braise, you’ll keep coming back for more.

Step 1: Prep and Smoke beef short ribs

Traditionally, beef short ribs are cut into individual bones, flanken cut or a full rack. The ones that I used here were a little different. I picked these up at local Asian market. They were cut thick, across all 3 bones. If you want to try the same cut at home, ask your butcher or visit your local Asian market. Otherwise, you can just purchase regular beef short ribs and still follow my recipe.

Beef ribs are rich in natural flavor. A small amount of seasoning is all you need to enhance them. I used Dad’s All Purpose and Sweet BBQ rubs to cover all sides.

Preheat the grill to 250-275 degrees and set for indirect heat. I used my weber kettle and kingsford low and slow briquettes. They are great for long low and slow cooks.

Place the seasoned ribs on the grill and smoke them for 4 hours or until the internal temperature reaches 170-180 degrees.

Recipe Tip

To maintain tender and juicy meat, spritz the ribs with apple cider vinegar every hour.

Step 2: Braise the beef short ribs bites

In an aluminum foil pan, add Bachan’s Sweet Honey BBQ sauce, rice vinegar, ginger and garlic paste and half a chopped up white onion. Next, mix the ingredients together, place the smoked beef ribs in the pan and cover with foil.

Finally, place everything back on the grill and cook for another 2 hours allowing the meat to tenderize in the liquid. Continue cooking until the meat is probe tender, meaning a toothpick or a temperature probe goes in without any resistance. Like a hot knife into butter.

Remove them from the grill and let them rest for 10-15 minutes. Slice into individual pieces between the bones and enjoy these perfectly tender, delicious beef short rib bites!

Ingredients 

  • 3 Beef short ribs
  • 1 tbsp Dad's All Purpose rub
  • 1 tbsp Dad's Sweet BBQ rub
  • 2 cups Bachan's Sweet Honey BBQ sauce
  • 2 tbsp Rice vinegar
  • 1 tbsp Ginger paste
  • 1 tbsp Garlic paste
  • 1/2 White onion

Instructions 

  • Season the beef ribs with  Dad's All Purpose and Sweet BBQ rubs to cover all sides.
  • Preheat the grill to 250-275 degrees and set for indirect heat.
  • Place the seasoned short ribs on the grates opposite of the charcoal and let them smoke for 3-4 hours or until they reach an internal temperature of 170-189 degrees.
  • In an aluminum foil pan, add Bachan's Sweet Honey BBQ sauce, rice vinegar, ginger and garlic paste and half a chopped up white onion. Mix the ingredients together and place the smoked beef ribs in the braise.
  • Cover with foil and place it back on the grill for another 2 hours or until probe tender.
  • Remove them from the grill and let them rest for 10-15 minutes. Slice into individual pieces between the bones and enjoy
