Start with the sauce. In a saucepan add soy sauce, honey, apple cider vinegar, freshly grated ginger and garlic, brown sugar and Dad's All Purpose Rub. Whisk it over low heat until the sauce starts to thicken. Set aside once done.
Preheat the grill to 400 degrees and set for direct heat. Place the pork chops directly on the grates.
Depending on thickness of the pork chop, grill 1-2 minutes per side or until the internal temperature of the meat is 130 degrees.
Glaze the chops with the homemade soy honey sauce and continue to cook as it caramelizes over the crust. Remove the soy honey pork chops off the grill once the internal temperature reaches 140 degrees.
Remove off the grill and let it rest for 10 minutes before serving.
