This meaty, crunchy Cuban sandwich is the perfect warm lunch treat. Traditionally made with roasted pork, I made mine using leftover pulled pork.

To get things started, preheat the griddle to 375 degrees. Add a little butter to the flat top and throw on the refrigerated pulled pork and honey ham. About 10 minutes in, the meat should be perfect with light color marks.
Smear a generous layer of yellow mustard to the bottom of the bread and start with a layer of swiss cheese. Next, fold in a few slices of the honey ham and a generous scoop of the warmed pull pork. Top it all off with another layer of swiss cheese and finally the pickle slice on top. Add more yellow mustard to the top bun
Keep the griddle warm on a medium setting or 375 degrees. Add more butter and place the sandwiches on the flat top pressing down to flatten the form. Grill 5 minutes per side, pressing down each time.
