BBQ Sauce - Sweet Baby Rays
Instructions
Cut up skinless piece of pork belly into 1 x 1 inch cubes.
Season the cubes generously with your choice of BBQ rub.
Preheat the grill to 275 degrees, indirect heat.
Grill the pork belly cubes for 3 hours. Spritz them every 30-45 minutes with apple cider vinegar.
Place the pork in a pan and cover with your choice of BBQ sauce.
Put back on the grill and cook for an additional 45 minutes.
Be sure to rest them 15-20 minutes because they will be HOT
