Start with lightly pounding the chicken breast in a ziplock bag. This process helps you shape the chicken into an even filet.
Apply some olive oil as the binder and season with your choice of BBQ all purpose rub. Season all sides.
Preheat the grill to 450 degrees and set for direct heat. Total cook time should be no longer than 10 minutes flipping the chicken halfway through the cook. Remove the grilled chicken breasts off the grill at 160 degrees internal temperature.
Let it rest for 10 minutes which will allow the meat to reach it's final temp of 165 degrees and lock in all the wonderful juices making them a perfectly tender cut.
In a sauce pan add ketchup, brown sugar, bourbonof choice, worcestershire sauce, molasses, hot sauce, apple cider vinegar andmore all purpose rub. Whisk the ingredients together over low heat. Bring it to a simmer and continue cooking until the sauce thickens.
Dunk the entire grilled chicken breast into the bourbon sauce making sure you get a nice thick coating throughout. Assemble the sandwich.
