Cheese Sauce Instructions
Start by melting butter in a sauce pan. Add in flour and make a roux. Oncethe flour and butter are well mixed add in the milk.
Add in a handful of shredded cheddar at a time. Whisk to melt and blend the cheese in with the milk. Continue this until you run out of cheese and the sauce thickens. Season with taco seasoning for flavor.
Pulled Pork Nachos
Warm up leftover pulled pork in the microwave.
Lay tortilla chips flat on a large sheet pan and pour the cheese sauce over them.
Add the pulled pork, spreading it all over the chips. Season with 1 tbsp of taco seasoning.
Start adding the cubed toppings: tomato, avocado, red onion and cilantro.
Drizzle with sour cream or Mexican crema.
Serve and enjoy!

Use good quality, thick tortilla chips that can handle the weight of the toppings without getting soggy.Use a block of cheddar and shred it yourself for fresher ingredients and a more flavorful sauce.Instead of sour cream use Mexican crema. Similar to the American daisy, just more liquified. It's easier to spread across the nachos without the thick heaviness.
