Start by washing and dicing the yellow potatoes, onion and kale into bite size pieces.
Remove the Italian sausage from the casings and brown it in a Dutch oven or large pot over medium heat. Remove with a slotted spoon and set aside.
In the same Dutch oven, add the butter and onions and cook until translucent. Add the garlic, Dad's All Purpose Rub, crushed red pepper, black pepper and cook until fragrant, approximately 2-3 minutes.
Add the chicken broth, water and the diced potatoes. Bring to a boil and cook until the potatoes are fork tender, approximately 15-20 minutes.
Reduce the heat to a simmer and add back the cooked sausage, heavy cream and kale. Mix everything well and cook until the kale is tender, 10-15 minutes.
Add in grated parmesan cheese and check for seasoning. Add salt and pepper as needed.
Remove from the heat, plate and garnish with more parmesan and crispy bacon bits. Enjoy!
