Slice the veggies up and throw them into a cast iron or foil pan. Season with Italian seasoning, add some butter and let these sauté over indirect heat at 350 degrees.
Cook for about 10 minutes until the peppers often up but still have a little crunch to them. Remove off the grill and set aside.
Using 2 metal skewers, skewer the Italian sausage links together on both ends, making sure to tightly compact them together.
First start grilling the sausages on the direct side to get a nice sear and color on both sides. This will take 2-3 minutes per side. Next move them to the indirect side and it's time to load them up.
Start with a generous layer of shredded mozzarella cheese. Add in the sautéed peppers and onions and top with a little bit more cheese. Grill until the internal temperature of the Italian sausages reach 165 degrees.
Before removing the skewers, slice down the middle. This doubles the amount of servings.
