Remove the breakfast sausage from the wrap and shape 5-6 flat patties. Season with Maple Bourbon rub.
In a mixing bowl add eggs and milk and whisk together.
Mix together the pancake mix per container instructions. Add maple syrup.
Turn on the griddle to medium heat and place the bacon strips while the surface is still cold. Flip the bacon once the side down has built a nice crust.
Once the top is heated, add the sausage patties. Flip them in 5-8 minutes to sear the other side and cook evenly.
Add cheese and let it melt. Remove the patties once the internal temperature reaches 145 degrees Fahrenheit.
On a clean surface start pouring the maple syrup pancake batter to form small round pancakes in the size of the sausage patties.
To get the perfect size eggs start by ladling the the whisked egg and milk mixture on the griddle. Wait 1 minute and start folding in the sides to form a small square. Flip, cook for another minute and remove.
Assemble is easy. Start with a pancake, add the cheese covered sausage patty, followed by the fluffy egg, bacon, a little drizzle of the maple syrup and close with another pancake.
Notes
If you don't have a griddle, you can use a regular grill and cooking everything in a cast iron skillet or in the kitchen.For some heat, drizzle some hot sauce or add finely chopped jalapeno to the sausage patty.
