Coat the pork steaks withe olive oil and season on both sides with the bbq rub.
Preheat the grill to a high heat or 400 degrees and set for dual zone grilling.
Place the seasoned Pork Steaks on the direct side first and grill 1 minute per side and then flip. Repeat every minute until you get nice color on all sides. Remove from the grill and place them in a foil pan.
Cut the bell peppers and onion into strips and place on the pork steaks.
Add the minced garlic, Worcestershire sauce, beef broth and cover the pan with alumminium foil. Place it back on the grill on the indirect heat side.
After 30 minutes check for tenderness. The meat should be almost falling apart. If not, seal it up again, continue cooking and check again in 30 minutes.
Once done, remove from the grill, rest 5-10 minutes and serve. Enjoy!
Notes
Don't skip the seasoning.
Pork shoulder has a rich flavor and can handle a generous amount of seasoning.
Get the grill hot.
A hot grill is key to developing a flavorful crust.
Use two-zone cooking.
This gives you control over the cooking process and helps prevent the outside from burning.
Let the meat rest.
Even five minutes can make a noticeable difference in juiciness.
Don't slice immediately.
Give the pork time to rest before cutting into it.
