Season the chicken thighs with the all purpose rub on both sides.
Preheat the grill to high direct heat around 400 degrees Fahrenheit
Place the seasoned chicken thighs directly on the grates and cooking for 2 minutes before flipping. Continue these steps until the internal temperature of the grilled chicken reaches 170 degrees. Remove from the grill.
Place a large sauce pan or cast iron skillet on the grill and add all the bourbon sauce ingredients, except the corn starch slurry.
Mix everything together and cook over medium heat until it reduces by half, about 10-15 minutes.
Add the corn start slurry to the skillet and give it one more mix.
Chop up the grilled chicken thighs and drop them into the caramelized bourbon sauce and mix.
Serve the grilled bourbon chicken over a bed of white rice. Top with some chopped green onions and enjoy!
Notes
Use chicken breast for a leaner option. Remove from the grill once it reaches 160 degrees and rest for 5 -10 minutes before cutting up.Use apple juice instead of bourbon if you want to avoid using alcohol.
