Start off with finely chopping an entire batch of parsley and cilantro. Next add a tablespoon of minced roasted garlic, fresh ground horseradish, crushed red pepper flakes, salt, red wine vinegar and olive oil. Mix these ingredients together with a spoon, not a food processor
Cut the steak into 1 inch cubes. Season with steak seasoning. Next cube up the bell pepper and red onion.
Skewer the ingredients.
Set the grill to high direct heat at 450 degrees.
Place the beef skewers on the grill and flip every minute for a total of 5 minutes or until the meat reaches 130 degrees internal temp.
Before serving, brush the chimichurri over the grilled steak skewers.
Notes
Other steak alternatives include NY strip, chuck roast or even chicken breast if you prefer a leaner protein.Don't like bell peppers, use cherub tomatoes, zucchini or mushrooms. If using wooden skewers, soak them in water so they can absorb the moisture and not burn during the cooking process. I recommend using metal skewers. They are reusable and durable.
