To make BBQ sauce, In a sauce pan, add ketchup, brown sugar, Dad's All Purpose rub, Worcestershire sauce, apple cider vinegar and Sparkling Ice. Simmer over low heat until the sauce starts to thicken.
Cut up the pork loin chops into bite size cubes. Drizzle with some olive oil and season with Dad's All Purpose rub.
Preheat the griddle to a medium heat around 375 degrees. On one side of the flattop, throw on the marinated pork chop cubes and let them cook flipping them every few minutes for an even cook all around.
Finely chop up some onion and add it to the griddle in a clean space. Add frozen or fresh chopped carrots and peas and mix all them all together.
Separately add in the day old rice and let it warm up.
Once both are warmed up and have some color, mix the rice and veggies together. Pour some homemade sweet BBQ sauce on the mixture and continue to mix hibachi style.
Finally, add in the cooked pork and mix everything together one last time. Before serving, drizzle more BBQ sauce over the top.
