Season all sides of the bone-in pork chops with Dad's All Purpose rub and set aside.
For the glaze, in a saucepan, add equal parts balsamic vinegar and chicken stock. Next add in mustard, maple syrup, Dad's All Purpose rub, and a sprig of thyme and rosemary. Simmer over low heat until the sauce thickens to your desired consistency. At the end, throw in a small cube of butter.
Preheat the grill to 400 degrees and set for direct heat. Place the seasoned chops directly on the grates and grill 2-3 minutes per side. Depending on the thickness of the pork chops this might take a little longer.
Brush the homemade balsamic maple glaze on the grilled pork chops once they hit 130 degrees internal temperature.
Remove the pork chops off the grill at an internal temperature of 140 degrees.
Let them rest for 5-10 minutes.
Before serving, remove the herb strings and pour the remaining glaze over the pork chops.
