The sweetness from the onions along with the savoriness from the beer and pork chops make for the perfect weeknight dinner.

Place the unseasoned pork chops in your marinating dish and pour a can of beer all over them. Add 1 tbsp of my All Purpose Seasoning and let it marinade for at least an hour.
Set your grill to dual zone cooking and preheat to medium heat (400 degrees). Melt the butter in a cast iron skillet and add the onions, sage and thyme.
Cook for 10 minutes, stirring occasionally, until the onions turn translucent. Add the brown sugar, All Purpose seasoning, flour and mix well. Continue cooking for 2-3 minutes to cook out that raw flour taste/smell.
Add 1/2 can of beer, the beef stock, stir and continue cooking until the sauce reduces by 1/2. Approximately 10-15 minutes. Remove the skillet from the grill.
Remove the pork chops from the marinade and place directly on the grates over high heat. Season with the remaining All Purpose Seasoning on both sides, flip and grill until the pork reaches an internal temperature of 140 degrees. Remove from the grill and allow the pork to rest for 5-10 minutes.
Smother the grilled pork chops with the beer and onions gravy, garnish with fresh parsley, serve and enjoy!
