Split down the middle if the sausage link without cutting all the way through. Shape each sausage into a boat like form.
For the filling I used a block of cream cheese, mild giardiniera, shredded cheddar cheese and Dad's All Purpose Rub. Mix the ingredient together to form a creamy texture.
Fill the sausage boats with about 2 tablespoons of the cheesy mixture, more shredded cheddar cheese and top with another dash of seasoning. Place them on a wire rack.
Preheat the grill to 300 degrees and set for indirect heat.
Grill for about 20 minutes.
