Thoroughly wash a few russet potatoes and cut them into long strips keeping the skin on. Dunk them into an ice bath for 15 minutes.
Remove the potatoes from the water and pat them dry.
Preheat the grill and place a large dutch oven directly on the grates. Full it half way with bacon grease and wait until the oil reaches 350 degrees.
Total cook time for the fries or chips is 7-10 minutes. Remove them once you see a nice golden brown color. Season with salt, parmesan and fresh parsley while still hot.
Get the steak to room temperature. Season all side with Dad's Steak seasoning.
Preheat the grill to 500 degrees and set it for direct heat.
Sear the steak flipping it every 30-40 seconds to get an even sear and cook throughout. To achieve the perfect medium rare, the final internal temperature on the steak should be 120 degrees when removing off the grill.
Remove the steak off the grill and let it rest for 10 minutes.
