Trying out the new 9” tortillas from @caram3lo with some rice, bean and cheese burritos.

For the rice, soften up 1 small diced onion, add 1 cup of long grain rice and 1 tsp each: cumin, oregano, chili powder and garlic powder. Mix it well and toast for a few minutes until fragrant. Add the liquid, I used chicken broth and tomato sauce, bring it to a boil, cover and simmer for 15 minutes.

For the beans, warm up 1 can of pinto beans in bacon fat. I seasoned the beans with cumin, chili powder and onion powder. Mash the beans with a potato masher, adding some of the liquid from the can if the mix looks a little dry.

And now it’s time to assemble. Warmed up tortilla, beans, cheese, rice, more cheese and some Fritos chips on top. Roll it together, toast the outside and enjoy! Topped it with a little hot sauce and this burrito was delicious! Peanut butter jelly chicken? Let’s try it out.⠀

I’ve seen this made before and wanted to give it a try. Using chicken drumsticks and wings, tossed them in olive oil and seasoned with @meatchurch Holy Gospel. They hit the @biggreenegg , at 300 degrees, direct and elevated. I used the EggSpander system. Cook and turn the chicken every 8-10 minutes for an even cook.⠀

While the chicken was cooking, prep the sauce/glaze:⠀
- 1 tbsp peanut butter⠀
- 2 tbsp jelly⠀
- a few dashes of worchestire⠀
- 1 tbsp red wine vinegar⠀
- 1 tbsp hot sauce⠀
⠀
Mix everything together and let it warm up. You can add a little water to thin it out if too thick.⠀

One the chicken is almost done, coat it with the sauce and grill for a few more minutes. Pull, top with chopped nuts and enjoy! And it was really good! Great combo of sweet, savory and spicy. I might tweak the ratios little to make it more acidic, but otherwise, it was tasty!⠀

This was a first for me and I’m so glad I tried them! They are delicious! I love pork belly burnt ends as much as anyone, but they are super fatty and so rich that you can only eat a few pieces. These, on the other hand, are mostly meat with a little bit of fat. So you can keep eating away!⠀

I used a bone in pork shoulder for this cook. Cut around the bone and cube the pork up into 1 inch size cubes. I seasoned them pretty heavily with @hardcorecarnivore Red and they hit the @biggreenegg at 275 degrees indirect for about 2-2.5 hours. I did spritz them with @sparklingice Grape Raspeberry every 45 minutes or so to keep them nice and moist on the outside.⠀

After they hit around 180 internal or so, they go into a foil pan with a few pats of butter and plenty of bbq sauce. Cover with foil and back on the egg until they get super tender. Took another hour or so. Rest 10 minutes and enjoy!⠀
