Let’s make some pastor style pulled pork using a Swift Meats boneless pork shoulder.

The secret to this delicious recipe is the pork marinade. It give the pork a delicious sweet and spicy flavor that is just perfect on tacos.
Starting with the marinade, combine the following ingredients:
– 1 cup white vinegar
– 1/2 cup water
– 1/2 cup pineapple juice
– 6 tbsp Achiote paste
– 4 tbsp chili powder
– 4 tbsp cumin
– 4 tbsp garlic powder
– 4 tbsp salt
– 2 tbsp pepper
Mix everything together and pour over the pork shoulder. One of the great things about these Swift boneless pork shoulders is that they are already nicely trimmed and can be prepped as is out of the packaging.
Let the pork marinade for a few hours, ideally overnight. Remove from the marinade and cook on the grill at 250 degrees, indirect, for about 4 hours, until it reaches 170 degrees internal temperature. Place the pork in a foil pan, add 1/2 cup of chicken stock, cover tightly with foil and place back on the grill and continue cooking until fork tender, about 4 more hours.
Remove from the grill and rest in the foil pan for about an hour. After the rest, shred the meat and mix with all the juices in the pan. Place on tortillas, top with salsa, cilantro, onion, pineapple chunks and enjoy!
